We offer a dinner course appetizer that makes the most of seasonal ingredients.This cooking method brings out the flavor of the saury, which is simply eaten raw, then marinated and cooked at low temperature to create a confit.Served with a spelt salad made with foie gras, pacific saury rillettes, and mango, which go perfectly with the dish!
